About Ponshu Hotel Suimu
In May 2025, the mountain valleys of Tokamachi City, Niigata Prefecture welcomed their first new lodging opening in nearly half a century. Ponshu Hotel Suimu is a casual, 9 room hot spring inn created by renovating a defunct traditional ryokan in the historic Matsunoyama Onsen district. The project was spearheaded by Yuichi Yamagishi, an expert sommelier and master sake steward (sakasho) who also operates the nearby Sake no Yado Tamakiya and Hotel Kamosu mori. Designed entirely around the rich culture of Niigata’s regional sake, this unique hotel centers on a simple yet inviting concept: “Drink, unwind, and realign.”
Here, guests can warm up in legendary hot spring waters, work up a sweat in a sauna filled with the rich aroma of local Uonuma cedar, and leisurely sample exceptional Niigata sake curated by a master sake steward before drifting off into a deep, peaceful sleep. The name Suimu (meaning “sleeping dream”) reflects the inn’s hope that guests can gently relax both mind and body, much like the soft, hazy dreams experienced just before falling into a profound slumber. Rather than focusing on grand luxury, Suimu invites you to enjoy empty, unhurried time. Awaiting visitors is an experience found nowhere else, bringing together Matsunoyama’s famous healing waters, exceptional Japanese sake, rustic countryside cuisine, and an aromatic local cedar sauna.

The bar and dining area features a striking dark tone counter that creates a beautiful contrast, setting the perfect mood for a relaxed evening. It is an unpretentious, sophisticated space where you can casually enjoy a post sauna drink and light snacks in a comfortable setting.





Dining
The dining experience here embraces a refreshing, relaxed sense of freedom. The highlight of the dinner included is the Satoyama Temaki Sushi, a playful meal where guests roll their own sushi using fresh, seasonal local ingredients. Combining vinegared rice made from premium Uonuma Shiozawa Koshihikari rice and red vinegar with a colorful variety of treasures from both the sea and the nearby mountains, this dish naturally sparks lively table conversation. Depending on your booking plan, the kitchen also serves satisfying “sauna meals” (sameshi), such as a flavorful mapo tofu bowl made with regional Tsunan pork, perfect for recharging after a sauna session.
The next morning, guests are treated to a wholesome Satoyama Breakfast focused on fermented foods and fresh local vegetables. Accompanied by perfectly cooked Uonuma Shiozawa Koshihikari rice, it features a gentle, body friendly menu. The absolute standout is the Miso Soup Bar, where you can select your favorite local miso from multiple varieties and add your choice of ingredients and condiments to craft a personalized bowl. For an extra drink and light snacks after dinner, the first floor Bar & Dining area provides an unpretentious, laid back atmosphere. Additionally, the hotel serves a signature treat that has quickly become popular even with non hotel guests: a striking soft serve ice cream nestled in a jet black charcoal cone. Inspired by Matsunoyama Onsen’s traditional winter festival, Muko-nage Sumi-nuri (Groom Throwing and Ash Smearing), the treat comes in a classic rich milk flavor as well as a sophisticated, rum infused version for adults. Depending on the season, it is served with a vibrant sauce made from Niigata’s sweet Echigohime strawberries, making it a must try stop while strolling through the hot spring town.
Onsen
Matsunoyama Onsen is highly regarded as one of Japan’s Three Great Medicinal Hot Springs, alongside Kusatsu and Arima. Its source is “fossil seawater,” ancient ocean water trapped deep within geological strata approximately 12 million years ago. This highly concentrated chloride spring is famous for its exceptional heat retention, keeping the body thoroughly warm and cozy long after stepping out of the bath. Guests can fully immerse themselves in this historic healing water, long loved as a traditional therapeutic bathhouse destination, while surrounded by rich natural scenery.
Furthermore, Ponshu Hotel Suimu has introduced the very first sauna to the Matsunoyama Onsen street area. The sauna room is constructed using generous amounts of local Uonuma cedar; opening the door releases a soft, calming forest fragrance. The room is equipped for self inflicted steam (self-loyly), allowing guests to easily adjust the perceived temperature to their liking. Warming up in the mineral rich hot springs, breaking a sweat in the aromatic sauna, and cooling down in the cold plunge pool offers a golden wellness routine that even beginners can easily enjoy.
The hotel also accommodates day trippers with dedicated day use bathing options and private reservations for the hot springs and sauna, making it an excellent stop during a sightseeing trip around Tokamachi. While the interior design is kept clean, simple, and chic, playful details are scattered throughout, such as room keys shaped like full sized sake bottles and charming small goods featuring the hotel’s original character mascots.

To support environmental sustainability, rooms do not come stocked with disposable single use amenities, and the property operates on a primarily cashless payment system, providing a light, modern, and eco-friendly stay.

The crown jewel of this hotel is the exclusive, guest only Sake Tasting Lounge. Because the owner, Yuichi Yamagishi, is a certified master sake steward and professional sommelier, guests have access to a carefully curated lineup of Niigata’s finest regional sake, available to taste and compare freely throughout their stay. The specific selection changes depending on the season, but the lounge keeps roughly 30 unique labels on hand at all times. Guests can sample small pours at their own pace or hunt for their new favorite bottle.
