With a history of over 110 years, Tamakiya, a long-established ryokan in Matsunoyama Onsen, Niigata, was renewed in 2016 when the fourth-generation owner, Yuichi Yamagishi, took over and rebranded it as “an inn for savoring fine food and sake.”
Its exquisite dishes have earned a one-star rating in the French cuisine category of the Michelin Guide Niigata 2020 Special Edition, a testament to their exceptional taste and creativity.

Dinner
Dinner at Tamakiya features a full-course French menu prepared by Chef Akira Kuriyama. Chef Kuriyama trained at renowned Tokyo restaurants such as Restaurant Ryuzu and L’Atelier de Joël Robuchon, and is deeply committed to selecting ingredients, often venturing into the mountains to forage wild vegetables and fruits himself. He also incorporates traditional preserved foods and fermentation techniques from the Tokamachi region, creating a truly local gastronomy that can only be experienced in Matsunoyama.

The restaurant’s exquisite cuisine has earned a Michelin star in the Michelin Guide Niigata 2020 Special Edition under the French cuisine category, a testament to its remarkable taste and creativity.
Pairing Dinner
Over 1,000 varieties of alcoholic beverages are available.
The owner, Mr. Yamagishi, is not only a certified sommelier but also a “Sake Master” (Sakasho), holding the highest qualification in sake expertise.
Pairing Dinner
The main dish features locally sourced game meat.
In spring, appetizers feature freshly picked mountain vegetables and wild herbs, while in autumn, dishes highlight local mushrooms and game meat—each plate capturing the essence of the season.
Pairing Dinner
The perfect drink pairing is thoughtfully suggested for each dish.
The pairing course is available in several styles—sake only, wine only, or a mix of both. Half portions and non-alcoholic pairings are also offered, making it enjoyable even for those who don’t usually drink. Each pairing is carefully tailored to the day’s ingredients and the guest’s personal taste.
Pairing Dinner
A wide selection of sake cups and glasses is also available to enhance the experience.
What sets Tamakiya apart is its creative approach to pairing—changing the shape or material of the sake cup to match the dish, or infusing sake with herbs and tea to enhance its flavor. It’s an experience beyond a typical pairing course.
Breakfast
Traditional Japanese course meal
Breakfast features freshly cooked Uonuma-grown Koshihikari rice as the centerpiece, accompanied by colorful side dishes made from local vegetables and mountain plants. According to the chef, “In the evening we serve French cuisine, and in the morning we transform the same ingredients into Japanese dishes”—a reflection of Tamakiya’s dedication to harmony between Western and Japanese gastronomy.
/
Knowledgeable staff guide guests through each pour, making it approachable for sake beginners. Returning guests can discover new pairings each night, ensuring a memorable “gourmet and sake” experience.
Breakfast offers a Japanese-style meal with a different approach from dinner. The centerpiece is freshly steamed Koshihikari rice from Uonuma, accompanied by local vegetables, mountain herbs, and small side dishes. Chef Kuriyama’s philosophy is to present the same ingredients in a different style—mountain herbs used at dinner may appear at breakfast as boiled greens or fermented foods with local miso. The lightly seasoned dishes are gentle on the palate and highly satisfying.
A unique feature of breakfast is the presentation of five types of mini drinks, including vegetable and fruit juices and fermented beverages. Served like a colorful palette, these drinks are as pleasing to the eyes as to the taste buds. Enjoyed while gazing at the clear mountain scenery, breakfast at Tamakiya is a revitalizing start to the day during your stay.
Hot Spring
Matsunoyama Onsen has long been celebrated as a “medicinal hot spring” and is considered one of Japan’s three major therapeutic hot springs, alongside Arima and Kusatsu. Its waters are fossil seawater, originating from the Mediterranean around 12 million years ago, with a high salt content that keeps the body warm even after bathing.
Hot Spring
Open-air Bath
At Tamakiya, the pure hot spring water from Matsunoyama Onsen is luxuriously supplied directly to every bath. The large communal bath features both indoor and open-air baths, where the abundant flow of mineral-rich water and the faint scent of sulfur create a truly authentic onsen atmosphere.
Hot Spring
Natural Hot Spring Flowing Directly from the Source
The spring water is a chloride type, known for its excellent heat-retention properties and effectiveness in relieving fatigue and poor circulation. It also contains natural beautifying minerals such as metasilicic acid, leaving your skin smooth and silky after bathing.
Hot Spring
Open-air Bath
One of the greatest pleasures of staying at Tamakiya is being able to enjoy a private hot spring bath in your own room anytime you wish. Six of the eight guest rooms feature open-air baths fed directly from the source, allowing you to soak in the famous waters in complete privacy and comfort.
/
In winter, you can experience a “snow-view bath” surrounded by 2–3 meters of snow, with lights illuminating the falling snow for a magical atmosphere. Enjoy a morning bath with birdsong or an evening soak under a starry sky—an indulgence only possible with a private open-air spring bath.
The large public baths are also available to all guests, with indoor and outdoor pools for both men and women, open from 3:00 PM to 10:00 AM, so you can relax whenever you like.
Room
Tamakiya has a total of eight guest rooms, offering a mix of Japanese and Western styles. Six of the rooms feature private open-air baths with water directly from the source, while the remaining two are simple Western-style rooms without baths. Each room has been thoughtfully renovated under the current fourth-generation owner, combining modern comfort with the warm, rustic charm of the Satoyama countryside.
Room
Twin Room “Hinoki” with Open-air Hot Spring Bath (Direct from the Source)
The Hinoki room was renovated under the theme of “retreat.” The hand-carved wooden floor feels soothing under bare feet, and the gentle scent of Japanese cypress welcomes you the moment you step inside. The space is further enhanced by paper art created by Japanese washi artist Naoaki Sakamoto, offering a serene experience that engages all five senses.
Room
Art Room “Niji” with Open-air Hot Spring Bath (Direct from the Source)
Opened in March 2021, this “Rainbow Art Room of Happiness” features “Blooming Rainbow”, a wall artwork crafted using traditional oshie (padded picture) techniques by artist JISHAQMEN. Many guests have celebrated special moments here—some proposed, others found love—making it known as a lucky room that brings happiness.
The room’s design itself is art: the flowing shape of the sofa and the playful block furniture evoke the movement of a river, creating the feeling of “staying inside a work of art.”
It accommodates up to four guests with three single beds and futons. A private wine cellar stocked with wines selected by the in-house sommelier lets you enjoy a relaxing in-room drink.
Please note: due to the room’s unique artistic structure with several steps, it may not be suitable for guests with limited mobility.
Room
Japanese-Western Room “Ikoi” with Open-air Hot Spring Bath (Direct from the Source)
Ikoi is the largest room at Tamakiya, featuring a spacious open-air bath. Located next to the public bath on the first floor, it’s ideal for onsen lovers who wish to soak as much as they like.
The wooden deck facing the river provides a refreshing spot to enjoy the open air—and perhaps a glass of champagne while taking in the natural surroundings.
The room combines an 8-tatami Japanese space with two single beds, accommodating up to five guests—perfect for families or friends traveling together.
Room
Semi-double Room
Located on the corner facing the onsen town, Akatsuki is the smallest Western-style room at Tamakiya. It features two semi-double beds and no bath, offering a cozy, compact space ideal for short stays.
/
The layout and style vary from room to room. Some feature Japanese-Western hybrid designs with striking washi paper lighting, while others offer twin beds in a Western-style setting. All rooms come with air conditioning, Wi-Fi, and full amenities. Sustainable options are also provided, including organic bamboo toothbrushes, toothpaste sheets, and cotton pouches. Cute handmade baskets are provided for carrying items around the inn.
Guests can also enjoy a choice of colored yukata or traditional workwear-style pajamas (samue), a service particularly popular among women and international visitors.
Bar and Private Sauna
Just a two-minute walk from Tamakiya is its newly opened sister hotel, Ponshu Hotel Suimu, also produced by Yamagishi. Suimu is themed around “sake × hot springs × sauna,” and guests staying at Tamakiya can use its facilities with prior reservation.
Private Sauna
Authentic Sauna
Available even before check-in hours with an advance reservation.
Private Sauna
Cold Bath
The cold bath uses pure, soft spring water from the Wasabi Stream. Guests appreciate the gentle natural light filtering through the windows and the peaceful atmosphere surrounding the sauna.
Bar
Evening Bar Experience
The bar “Suimu” offers around 20 varieties of sake, carefully selected by owner and sommelier Mr. Yamagishi. Guests can freely enjoy these premium sakes along with light snacks in a relaxed evening setting.
/
Visitors often comment that the pairing recommendations are unobtrusive yet precise, and that the combination of food and drink is consistently surprising and delightful. Yamagishi holds qualifications as a wine sommelier, sake taster, and shusho, making him one of the few true alcohol experts in Niigata. This unique “sake-focused inn” concept has been highly praised, establishing Tamakiya as a hidden gem for gourmet travelers seeking a sophisticated, tranquil escape. It’s ideal for those wishing to celebrate special occasions with exquisite cuisine and sake, fully enjoy sake and wine pairings, or simply immerse themselves in a serene, extraordinary environment.
