Auberge ‘Né’ opened in October 2025 in Shibata City, Niigata Prefecture, as an exclusive one-group-per-day stay-and-dine experience. The name ‘Né’ carries dual meanings: ‘根 (root)’ in Japanese and ‘born’ in French, reflecting the concept of creating new value by making abundant use of Niigata’s local blessings.
While the accommodation fee of ¥90,000 per person positions it as a luxury offering, the unique philosophy permeating the cuisine, architecture, and space makes it an experience well worth the price. Designed by architect Kenta Fukunishi, the building incorporates “returning to the earth” elements throughout, such as using logs for the foundation to minimize excavation and constructing the space with earthen walls and Shibata cedar wood.

The charm of Auberge “Né” lies above all in its cuisine. There is no menu here. A 13-course seasonal menu featuring 100% Niigata ingredients is served, but “every dish is the main course.” Chef Makoto Fuse composes the menu on the spot based on the day’s freshest ingredients. With a strict limit of six guests per day, including restaurant diners, you can enjoy an incredibly luxurious dining experience, conversing directly with the chef while savoring the dishes.

Breakfast features salmon marinated in rice malt, pickled vegetables, umeboshi, and miso soup, served with locally grown Kawahigashi rice. The rice, cooked with the region’s pure water, is so delicious that guests often help themselves to multiple servings. The same premises also house the barrel sauna facility “sui,” which opened in November 2024. Guests can experience “totonoa” (relaxation) in a wood-fired sauna that reaches temperatures up to 110°C and a well-water bath at 15°C. Guests can also enjoy forest bathing surrounded by Niigata’s forests on the outdoor deck, which is available free of charge between 2:00 PM and 4:30 PM. The accommodation fee includes not only the sauna fee, but also swimsuits, towels, and ponchos.
