Founded in 1919 with a long history, Marunaka is celebrated as the birthplace of Japan’s “Morning Ramen” (Asa-Ramen) culture. Marunaka’s signature dish is classic Chuka Soba (ramen), light enough to enjoy even early in the morning. Marunaka takes great pride in its soup base, carefully preparing it from scratch every single day.
The soup features a Japanese-style dashi stock made from bonito flakes and kelp, simmered with pork leg meat and finished with dark soy sauce.
The noodles are homemade medium-thick straight noodles crafted with minimal alkaline water (kansui), giving them a chewy, udon-like texture. With a smooth surface and light taste, it goes down easily and makes a perfect breakfast.
The chashu (roast pork) uses lean pork leg meat. Because it utilizes the same cut used to simmer the broth, the entire bowl achieves a perfectly unified and harmonious flavor.
Marunaka started serving morning ramen in response to the unique lifestyles of people in Fujieda. Since many local residents, such as tea farmers and fishermen, started work early in the morning, the shop gradually shifted its opening hours earlier to cater to them.
