About Isonosawa

Located in Ukiha City, Fukuoka, Ukiha Sakeshuku Isonosawa is an exclusive private accommodation limited to one group per day, set within the grounds of the historic Isonosawa sake brewery founded in the Meiji era. The 130-year-old traditional townhouse has been beautifully renovated, allowing guests to experience the authentic atmosphere of a working sake brewery while enjoying complete privacy and comfort.

The concept of the stay is “lodged by sake lovers, for sake lovers.” The term yoibito refers to those who cherish Japanese sake culture and the lively conversations that unfold over a shared drink. From check-in to check-out, guests symbolically follow the journey of sake brewing — imagining themselves as rice grains transformed into fine sake. This immersive and playful concept makes the stay especially captivating for sake enthusiasts.

Room

The guesthouse at Isonosawa is a beautifully renovated 130-year-old traditional home where the brewery’s master brewer and owners once lived. The two-story house features a spacious 25-tatami main hall on the ground floor, along with a traditional doma (earthen-floor) dining space. With its high ceilings and original beams and pillars still intact, the home preserves the character of a historic Japanese residence. In the tatami-floored hall, low tables and sofas create a relaxed setting where you can unwind and imagine the lively sake gatherings once held here. Upstairs, a generous 31.5-tatami sleeping area provides ample space to lay out futons comfortably for up to nine guests. Ideal for group trips or large families, the entire house is reserved exclusively for one party, ensuring complete privacy throughout your stay.

Playful design touches are woven throughout the interior. While honoring the home’s century-old charm, the décor incorporates motifs unique to a sake brewery. Oversized sake bottles have been transformed into hanging lamps that cast a soft, atmospheric glow through the glass. Lantern-style lights along the hallway use traditional wooden masu sake cups, adding warmth to the space. Even an old chest of drawers has been converted into a softly lit closet, creating a cozy, hideaway-like nook.

Despite its historic atmosphere, the house is fully equipped with modern comforts, including air conditioning and Wi-Fi. In the upstairs bedroom, a dedicated sake refrigerator is stocked with a selection of Isonosawa’s finest labels, all available for guests to sample freely during their stay.

Dinner and Breakfast

Dinner is thoughtfully designed to highlight the pairing of seasonal local ingredients with fine sake. On the first floor of the inn, the Italian restaurant CASA CUOMO CAFE UKIHA ISONOSAWA serves creative dishes developed in collaboration with renowned Neapolitan pizza chef Salvatore Cuomo. Guests may reserve a full-course dinner here in advance, or choose from a curated list of recommended local restaurants to enjoy dining out in the area.

Breakfast is especially recommended after a morning sauna session and is also served at CASA CUOMO CAFE UKIHA ISONOSAWA. The menu features generous use of fresh local ingredients, offering an energizing start to the day. Seasonal offerings may include naturally leavened house-made bread, salads with locally grown vegetables, and carefully selected egg dishes—showcasing the region’s finest flavors in a relaxed setting. It’s the perfect way to ease into the morning while savoring the lingering memories of the night before.

For sake lovers, the inn also offers a complimentary free-drink service. During your stay, you are free to enjoy all of the brewery’s signature labels from the in-room sake cellar at your leisure. The selection includes the flagship junmai sake “Shun,” as well as daiginjo, plum wine, and more—inviting guests to compare and savor a wide range of styles. “Shun,” an award-winning label, is known for its smooth texture and elegant aroma. A set for warming sake is also provided, allowing you to enjoy it at your preferred temperature. Throughout your stay, you can indulge fully in the pleasure of exceptional local sake.

Onsen

While Isonosawa does not have a natural hot spring, it offers a one-of-a-kind bathing experience unique to a sake brewery. All water used throughout the property—showers, cold baths, and even tap water—comes from the soft underground spring water of the Aso mountain range, the same pure water used in sake brewing. Guests can fully immerse themselves in this gentle, high-quality water during their stay.

After check-in, begin by rinsing off your travel fatigue with a shower using this brewing water. Then experience the round barrel sauna made from a repurposed sake cask, followed by a cold bath converted from an actual fermentation tank. The sauna allows for self-service loyly, and the scent of the wooden barrel enhances the deeply warming experience. Plunge into the custom tank cold bath to cool your heated body—the 100% brewing water feels remarkably smooth and mild against the skin. For the best experience, repeat the cycle of sauna, cold bath, and outdoor air at least three times. The refreshed, perfectly balanced feeling afterward is truly exceptional.

During your outdoor rest, sit on the wooden deck and enjoy the fresh air while looking up at the night sky. It’s a simple, refreshing way to relax both your body and mind. From the deck, you can also see the large camphor tree that has watched over Isonosawa for generations.

The sauna and cold bath are available anytime during your stay, including early morning. Whether at night or after waking up, you can enjoy the sauna as often as you like and cool down in the soft brewing water. It’s a unique and deeply relaxing experience you can only have at a sake brewery stay.

Special Activities

The most distinctive feature of Ukiha Sakayado Isonosawa is that the entire stay is designed as a hands-on sake brewing experience. From check-in to check-out, each step of your visit follows the stages of the sake-making process in a creative and immersive way.

Check-in at 2:00 PM represents the first step of brewing, seimai (rice polishing). After completing reception, you are welcomed as if you were carefully selected sake rice. The staff then explains how to use the facilities and how to spend your time at the inn—like learning the “proper way” before brewing begins. Just as rice is polished to shine, you begin your stay feeling refined and ready to step into the role of a true sake lover.

At check-in, you receive a wooden “My Masu” cup as a keepsake, which you use to enjoy unlimited sake from the in-room cellar. Your first shower is called “rice washing,” where you cleanse yourself with the same pure spring water used in brewing. Next comes “soaking and steaming”: the barrel sauna thoroughly warms your body, followed by immersion in the brewing-water cold bath and outdoor relaxation. Repeating this cycle at least three times recreates the preparation of rice before fermentation.

After the sauna, sake is served as a welcome drink — the beginning of “fermentation.” As evening falls, dinner after 6:00 PM represents “heat treatment,” where local cuisine and sake are savored alongside lively conversation. Later, retreating upstairs to sleep mirrors the “aging” stage, as the sake rests and matures.

In the morning, a refreshing sauna session awakens the body before breakfast at the adjoining restaurant — your “blending” stage. Before the 11:00 AM check-out, guests can purchase their favorite bottle at the brewery shop — the symbolic “bottling.” By departure, you leave as if reborn as a finished bottle of sake, fully “brewed” in body and spirit.

Beyond this playful concept, the inn offers many brewery-inspired touches. Amenities include soap and skincare made with sake lees, gently scented and skin-friendly. After the sauna, the proprietress serves a special sake-lees smoothie with a mild, amazake-like sweetness. Guest rooms include snack sets perfect for pairing with sake.

With advance reservation, guests can also join a guided brewery tour to observe the brewing process up close — especially recommended on weekday afternoons when explanations by the brewers are available. At check-out, you take your My Masu cup home as a souvenir. Enjoying sake from it later will surely bring back memories of your stay. For lovers of Japanese sake, this is a one-of-a-kind retreat — an immersive, story-driven experience that can only be found here.
